Strawberry Shortcake recipe


So the summer holidays are upon us. Here is a great recipe (original source is Nigella torn out of a magazine) which is easy to do with the kids and the end results are delicious.
You will need for the shortcakes. 325g plain flour 1/2 teaspoon salt, 1 tablespoon of baking powder, 5 tablespoons of caster sugar, 125g unsalted butter (frozen) 1 large egg beaten, 125ml single cream, 1 large egg white lightly beaten a baking tray and a 6 1/2 cm round cutter-preheat the oven to 220/gas mark 7

Mix the flour, salt, baking powder and 3 tablespoons of sugar in a bowl


Grate the butter into the dry ingredients


use your finger tips (or in this cases my little girls) to finish crumbling the butter into the flour



whisk the egg into the cream and pour into the flour mixture a bit at a time using a fork to mix


Turn the dough out onto a floured surface


roll to a thickness of about 2cm


dip your cake cutter into some flour and cut as many rounds as you can


Place the shortcakes about 2 1/2 cm apart and brush the tops with the egg whites


I got about 12 out of this mixture


Sprinkle the remaining 2 tablespoons of caster sugar on top


pop in the oven for about 10-15 minutes until they are golden brown-let them cool and fill them with cream and strawberries


Serve with freshly brewed earl grey whilst listening to Kate Bush-okay the last bit is optional
